Sometimes the value coded in the Stored Height field of the Video descriptor is the Field height and sometimes it is the Frame height. How to solve this ambiguity ?

The same is the case with Sample rate. Sometimes it is the field rate and sometimes frame rate.

The value depends on FrameLayout as follows:

FULL_FRAME = frame height
SEPARATE_FIELDS = field height
SINGLE_FIELD = field height
MIXED_FIELDS = frame height
SEGMENTED_FRAME = frame height

Thanks for the reply Matt. Can I assume the same with the sample rate ?

FULL_FRAME = frame rate
SEPARATE_FIELDS = field rate
SINGLE_FIELD = field rate
MIXED_FIELDS = frame rate
SEGMENTED_FRAME = frame rate

That sounds about right - although I would be tempted to use frame rate for SINGLE_FIELD as this is basically the rate at which the data we are receiving was captured.
